After two and a half years of selling baked goods through her website, Andi Vann is opening her own sit-down-style bakery, Pure Bliss Desserts, in the former Anker Cafe location at 1426 Cornwall Ave., next door to Chocolate Necessities’ retail outlet.

The location isn’t new to Vann. She has been renting the commercial kitchen in the back to make her desserts, which include everything from sophisticated wedding cakes to playful cupcakes and cookies. She even has a few gluten-free options and hopes to offer vegan options, too.

Vann said she likes baking just about everything, but her favorite part of the process is working with fresh ingredients.

“I just really enjoy working with ingredients,” Vann said. “I believe you use the best quality ingredients that are available to you.”

That’s why her bakery will have some mainstay goodies on her menu, but it will also contain rotating options. Vann said options at the bakery will change with the seasons.

“I’m really into local and seasonal items, so we will always have a rotating menu of what’s available here and now,” Vann said.

For now, Vann will squeeze in work on the 1,600-square-foot site between contracts she has through the summer. She is aiming for a fall opening, but said she has quite a bit of cosmetic work to complete before that, so the opening date isn’t close to being finalized.

Eventually, Vann said she wants to create an ambience that is both cozy and sophisticated, with a variety of seating options and a children’s area. She also said she will probably end up hiring two employees to help her in the bakery.
