Bloom, a new restaurant located at 1320 Cornwall Ave. in the former Kendrick’s space, opened Oct. 13.
Owner Justin Bilancieri said the restaurant features soups, salads and wraps — and everything is vegan and 100 percent organic. Most of the meals are gluten-free, too.
Bilancieri has been a vegan for about seven years and has dreamed of opening his own restaurant.
“I was a bit shocked when I came to Bellingham, which I think is a very progressive town, and I couldn’t even find a vegetarian restaurant,” he said.
Seeing a need that wasn’t being met, Bilancieri decided to open his own restaurant. Bloom will be open Tuesdays through Fridays from 8 a.m. to 2 p.m.
For breakfast, Bilancieri offers items such as Belgian waffles and raw sprouted granola with coconut milk. Lunches range from hummus and veggie plates to salads and wraps.
On Fridays and Saturdays, Bloom will be open until 3 a.m. “to offer a healthy alternative to late night snacking,” Bilancieri said.
