The Copper Hog, a new Bellingham gastropub, signed a lease to take over the old State Street Depot space at 1327 N. State St.
James Hardesty from the Green Frog Acoustic Tavern, Josh Magnes from the Little Cheerful Café, and chef Aaron Matson will join together to create the new gastropub-style restaurant, said Ken Reinschmidt from Saratoga Commercial Real Estate.
Hardesty said gastropubs have only been around for about 15 years beginning with The Eagle in London, England, and hitting the states with The Spotted Pig in New York City’s West Village, which he said has a diverse celebrity clientele.
“You could easily see Bono, Jay-Z and Bill Clinton at the same table there,” Hardesty said.
The main idea, Hardesty said, is to create a relaxed, casual fine dining atmosphere with an emphasis on quality food and beer.
“It’s about putting out a quality product without being pretentious,” Hardesty said.
The owners hope to have the business open by mid-March but no later than April 1.
