A new business is set to liven up the small, brick building at 2201 Cornwall Ave. across the street from Assumption Catholic School.
The 400-square-foot space, which has been vacant since 2006, will soon be the home of Johnny’s Donuts. Business owners Karin and John Koons recently received a conditional use permit to operate their bakery in the building.
The Koons are planning to apply for remodel permits soon and are hoping to open in June. The donut shop will be simple, with just a donut fryer, kitchen equipment and display case. No drive-through window and no indoor seating — just doughnuts and drip coffee to-go, Karin said.
Despite it’s small size, the space has charm, lots of history and is located on busy road, Karin said.
“We like it because it’s a stand-alone location,” she said. “There’s a few food establishments on that street, but not much else.”
The building was originally a gas station that was converted to a restaurant in 1976. More recently, the building was home to Morries Club Barbershop, now located down the street at 1523 Cornwall Ave.
The Koons are no strangers to the food industry. In the mid-1970s, John opened the Mount Bakery — no affiliation with the current Mount Bakery — out in Nugent’s Corner. The couple also spent 10 years cooking for cannery employees in Alaska.
“We’re really excited to be doing this back in Bellingham,” Karin said.
