Electric Beet Juice Co., a juice stand inside the Public Market, will open on Dec. 3, the owners said in a press release.
The juice bar will serve fresh juice, smoothies and breakfast and lunch items with a focus on local and organic ingredients, according to the press release.
Co-owners Sara Southerland and Kara Marklin funded the construction and opening of the juice bar with a crowdfunding campaign that started in August.
According to the news relrease, Electric Beet Juice Co. is one of the first Bellingham restaurants using the Puget Sound Food Hub, a delivery service that aggregates products from Skagit and Whatcom County farmers and delivers to restaurants, grocery stores and institutions throughout the Puget Sound area.
