Two Tomatoes Catering opens downtown

Just as soon as Fools Onion moved out to Greene’s Corner, another catering-type business has popped up to take its place downtown.

Local cooking instructors Cindy McKinney and Ana Jackson have opened Two Tomatoes Catering, a “ready-to-heat” meals and catering company, at 1101 N. State St. # 102 in the Masonic Hall. The business officially opened on May 11.

McKinney said she has been cooking on and off for the past 20 years and has been teaching cooking classes at Whatcom Community College and the Community Food Co-op for the past 11 years. Jackson has been teaching Mexican cooking classes for the past four years.

While Two Tomatoes has already booked some weddings and will be food vendors at the concert series in both Boulevard and Elizabeth parks, McKinney said the company is really pushing the ready-to-heat meals that are ordered from an online menu and assembled by McKinney and Jackson to be heated later.

“Our main focus is going to be healthy, homestyle meals for working families on the go,” McKinney said.

For the ready-to-heat meals, McKinney said there are four different menu items per week now, but she hopes to be up to eight menu items per week by the end of the summer. Current menu items include: arroz con pollo, Thai steak salad, roasted vegetable lasagna and lemon Greek chicken. Large dinners for four to six people are $25 and small dinners for two to three people are $15.
